Easy Slow Cooker Chicken and Rice

I have been going through a spicy kick and I have been trying out new dishes and turning them into something that my whole family would love to eat. Check out my latest creation which is super easy to make and perfect for the week day.

Chicken and Rice

Ingredients:

6 Boneless, Skinless Chicken Breast

1 Packet Taco Seasoning

1 Jar Salsa (I got Mild, but you can get Medium or Hot)

1 Cup Shredded Sharp Cheddar Cheese

2 Bags of Boil In Bag Rice (I use Walmart brand)

1 Cup of Chicken Broth

Directions:

1. Spray cooking spray into your crock pot and place your chicken in there. Shake the taco seasoning over the tacos. Don’t worry about mixing all this up just yet. Top it with your salsa. Cook on low for 6-8 hours or high for 4-6 hours.

2. When your chicken is done, take it out and shred it up and place back in the crock pot. Mix the chicken up real good with the taco seasoning/ salsa mix. Turn off your crock pot and put the cheese over the top and place the lid back on.

3. In a large pot, place your chicken broth and both packs of rice. Add enough water to cover and bring to a boil according to package directions. This usually takes around 8 to 10 minutes. When this is done cut open your bags of rice and place in a bowl.

4. Now is the fun part. Take a serving of rice and place in your plate and top it with as much cheesy chicken as you would like. If you would like you can also add some sour cream to the top of your chicken.

That is it!! This was such an easy meal and would be perfect to start before you leave for work and finish once you get home.

    Oh, this is REALLY on my do-to list! I surely will top with a dollop of sour cream, too, as you suggest! The only little tweak I would make would be to add about 1/4 cup of Monterey Jack cheese (just my personal preference), and a smattering of chopped green onions. Pinned and planned, and I’m going to love this, thanks! : )
