On The Go breakfast Bites


These On The Go Breakfast Bites are so delicious and really easy to make. They also freeze easy so you can make them ahead and plop one in the microwave when school starts back.


1 Bag of Frozen Tater Tots

1 Carton of Eggs

Fillers – this is what will be inside your bite. It can be cheeses, hams, etc. Whatever you like in an omelette.

2 Cups of Sharp Cheddar Cheese

Pam Spray


Spray your muffin pan really good with Pam Spray. Preheat oven to 375 Degrees.

Step 1: Place 2 Tater Tots in each muffin in a muffin pan.

Step 2: Squish down the tater tots until they are all nice and flat.


Step 3: put in your toppins. I used sliced cheese, cut up ham, a little bacon and a few tomatoes.

Step 4: Break open the eggs in a bowl. I would use around 4-5 but it really depends on how many you are making. Pretty much 1 egg a bite. Then get them all mixed together and pour over the tater tot/veggie mix. Top with a little bit of cheese.

Step 5: Bake in the oven for around 25-30 minutes. Take them out and enjoy.


*These freeze really well, so when school time comes this will be something perfect for you and your kids!

    My microwave nukes stuff so I only do about 30 seconds. I would first heat 30 seconds then an additional 15 seconds until it’s warm.
