Lasagna Roll Ups
Who doesn’t love a good lasagna?! I do but they are so messy to cook and require so much time and attention. Not to mention when I try to make lasagna something goes wrong and my husband ends up turning around and leaving the kitchen when he sees the makings of lasagna sitting on the counter. Well I was browsing around Pinterest one day and I found this really delicious recipe from Primavera Kitchen and I decided to try it out and give it my own twist.
For the Meat Sauce:
1 jar of your favorite Spaghetti Sauce
1 TSP Italian Seasoning
1/4 Cup Parmesan Cheese
For the Cheese Mix:
1 Container (15 Oz) Ricotta Cheese
1 Cup Mozzarella Cheese
1 TBS Parsley
Other things needed:
1 Package Whole Wheat Lasagna Noodles
2 Cups Italian Shredded Cheese
1 Cup Parmesan Cheese
Go ahead and start boiling the noodles. I like to boil the water first and salt it and then add in the noodles. I cook it to al dente (according to the box). Once these are done I put them in ice water so it will cool down. While the noodles are cooking I go ahead and start browning my ground turkey. I like to add some onions in mine but that is just my taste. While it is browning go ahead and add in the Italian seasoning. Drain when completely brown and add in your spaghetti sauce. Mix together all of the cheese mix ingredients (Ricotta, Mozzarella, Parsley and Egg). Take your lasagna noodles and stretch them out. First put down a layer of the cheese mix, then a layer of the meat sauce, and then sprinkle some Italian cheese and then just roll it up. Take your rolled up lasagna and place it on a baking pan. I like to sprinkle a little bit of the spaghetti sauce over it then top with remaining Italian noodles and some parmesan cheese. Bake at 350 degrees for 30-45 minutes (once the cheese starts browning on the top). Let cool and enjoy. You will never want regular lasagna again!!
