Mexican Sliders with Jalapeno Salsa and Queso
During the summer, pretty much everything we cook is out on the grill. Living in South Carolina, it is usually too hot to try and attempt to turn the stove on inside. Plus with how weird our house is set up and insulated, we are like an oven. Seriously, I think I could crack open an egg on my counter and it would fry. Anyways, when we can we cook on the grill besides, who doesn’t love a good piece of grilled chicken or hamburger.
I love Mexican cuisine. I really could eat it every day. I love a good ol’ slider packed with lettuce, tomatoes, and cheese. I got the normal stuff to make my recipe the other day at the grocery store and had to grab some pickles. I looked up and it was shining bright like the sun. The Mezzetta olives and peppers were standing proud ready to be picked for an exciting recipe. At that exact moment, I decided I would try out Mexican Sliders with Jalapeno Salsa and Queso.
This recipe has several different elements and a lot of work and prep goes into this recipe but it is so worth it in the end. I’ll take you step by step through each recipe then at the very end I will let you know how to assemble and enjoy. Let’s first get into how to prepare and make the patties for the sliders.
Ingredients you will need:
1 pound of ground beef
1 TBS garlic powder
1 small red onion diced
15 slices of pepperoni
1 large egg
1 can red kidney beans, smooshed
3 TSP dried oregano
1/2 cup of fresh parmesan.
2 TSP cumin powder
1/2 cup of Mezzetta Deli-Sliced Mild Pepper Rings diced
These are very simple to make. Are you ready?? Just combine all the ingredients in to a large bowl, mix well, and let sit for about an hour. Yep!! That simple. I like to let my meat marinade for a good little bit so that the flavors mix well together. I know you also were like, um, pepperoni? Yes, trust me. It is a secret ingredient that I put in all my hamburger patties. It makes the meat stay moist and does not dry them out. So after you have let them sit for an hour, preheat your grill and get it ready. I like to cook hamburgers around 350 degrees. Make your sliders. I just use a measuring cup to make them the perfect size. Cook them for 4 to 6 minutes on one side, flip then another 4 to 6 minutes.
Ok, now that the hard part is done, lets make the other two. First, let’s make the Jalapeno Salsa.
Ingredients you will need:
1 cup cucumbers sliced
4 small tomatoes, cut into quarters
1 small red onion sliced
1 TSP coriander powder
good splash or so of the Jalapeno juice, really depends on how spicy you like it
dash of salt, pepper
Place everything in a Nutri Ninja. I really love this appliance, it’s perfect for anything. Turn it on, press chop and I let it count up to 10 and that gives a really good salsa consistency. Let the salsa sit in the fridge for at least an hour.
Now, let’s make the Queso dip!
You will need the following ingredients:
Mezzetta Deli Sliced Roasted Red Bell Peppers, 1 cup diced
1 can Rotel
8 oz of cream cheese
2 8oz packs of Pepper Jack Cheese diced
8 oz plain greek yogurt
3/4 cup of milk
Put everything in a pot, set on low and let it slow cook until everything is melted and mixed well. Stir occasionally.
Now let’s get started assembling the Mexican Sliders with Jalapeno Salsa and Queso. You will need some rolls for the buns. I found some wheat ones at the grocery store bakery. Then, of course, the normal toppings you would like on your sliders. So spread mayo/ketchup/mustard/whatever on your buns. Then place a slider, then the toppings you would like on there. I did simple lettuce and tomatoes. Then you will want to put your Jalapeno salsa over that and drizzle the Queso over that and top with the other half of your bun. Voila!! You are finished!! I like to serve the salsa and queso as well with some tortilla chips.
