Mini Stuffed Bell Pepper Bites #Ragutailgating

January is an exciting time of the year. Not only do we get to bring in the New Year and have a fresh book with 365 new pages to write our life in, but there are a ton of sporting events. Not only is the BIGGEST football game of the year coming up, but tons of other games. During these events, friends and family hang out together for great tailgating parties and get-togethers.

During these tailgating parties, no one wants to be trying to eat snacks with a fork over a table! They want to grab, snack, and go! One of my most favorite, and most requested recipes is my Mini Stuffed Bell Pepper Bites. They are not only delicious but mini and able to be grabbed for snacking on the go.


When I make this delicious snack, I always head to my local Kroger and head straight to the RAGÚ® Homestyle Pasta Sauce. I bet you did not know, but RAGÚ is for more than just pasta dishes! It can be used for the perfect tailgate spread to entertain your friends and family. Why is this the perfect addition to any tailgating spread?  Well first, it is made out of farm-grown ingredients, such as vine-ripened tomatoes, fragrant herbs and does not contain any artificial flavors, high fructose corn syrup, and no artificial history. Even better- tastes homemade, which adds robust and a “homemade” taste to your dish. There are several different RAGÚ Homestyle Pasta Sauce flavors, but some of my favorites are the Homestyle Traditional Pasta Sauce, Homestyle Meat Pasta Sauce, and Homestyle Roasted Garlic Sauce. For my Mini Stuffed Bell Pepper Bites you will need the following ingredients:

9 Mini Bell Peppers

1 Regular Red Bell Pepper

1 Pound Hamburger Meat

1 Cup Mushrooms, Chopped

1 Cup Onions, Chopped

1/2 Cup  of RAGÚ Homestyle Traditional Pasta Sauce

1/2 Cup of RAGÚ Cheddar Cheese Sauce

1/2 Cup of Instant Brown Rice

Shredded Cheese

The directions are simple!

  1. Take your mini peppers and cut them in half. Make sure to scoop out the middle and wash out all of the seeds. I have found this can be done ahead of time, and the mini peppers can be frozen or placed in the fridge.
  2. Preheat your oven to 350 degrees. Cook your onions and mushrooms until the onions are translucent, about five minutes. Brown your ground beef and drain out the fat. From here it gets really easy! Mix in 1/2 cup of the RAGÚ Homestyle Traditional Pasta Sauce and RAGÚ Cheddar Cheese Sauce. This is just my personal preference, if you want it cheesier, you can add in more of the cheese sauce. If you want it with more of a tomato taste, add in more of the Homestyle Traditional Pasta Sauce.
  3. In a pot, cook your Instant Brown Rice according to the box direction. Sometimes I use beef broth instead of water for a richer taste, but totally my preference and up to you! Once this is done, mix it in with your hamburger mixture.
  4. Fill the mini pepper halves with your hamburger mixture. It takes about 2 or 3 spoonfuls to fill the pepper halves. Place them in the oven for 20 minutes. After the 20 minutes, take out and put shredded cheddar cheese on the top of them and place back in the oven for another 5 to 10 minutes, until the cheese is melted.
  5. Take out and enjoy!
