Every where you turn in the south, you will find Sweet Tea. Its just a way of life here in the south. This delicious recipe is for a Sweet Tea Cupcake that is melt in your mouth to die for! They are very delicious. As an added bonus, there is also a recipe for a Chevron Sugar Wafer that you can use as decoration on top of these cupcakes (since chevron is so popular too) and an added bonus.. you can dip it in your Sweet Tea to make a delicious treat.
Sweet Tea Cupcakes
• 1/4 C + 2 TBSP milk
• 5 tea bags
• 1 1/2 C flour
• 1 tsp baking soda
• 1/4 tsp salt
• 1 C sugar
• 1/2 C vegetable oil
•1 tsp vanilla
• 2 eggs
-Preheat oven to 350 degrees.
-Line cupcake pan with paper liners.
-Heat milk in microwave for 1 1/2 minutes, stirring after 1 minute.
-Add tea bags to milk , steep for 5 minutes.
-Combine the dry ingredients.
-Mix the sugar, oil, and vanilla.
-Add eggs to the sugar, oil and vanilla, one at a time into another bowl.
-Alternate adding dry ingredients and milk/tea combination to the above mixture.
-Make sure tea is fully incorporated.
-Scoop batter into the lined cupcake tins until 2/3rds filled.
-Bake at 350 degrees for 20-25 minutes or until an inserted toothpick comes out clean.
-Cool for 10 minutes, then remove from cupcake pan to cool on wire rack.
• 4 C powdered sugar
• 1 C unsalted butter
• 4 TBSP heavy whipping cream
• 1 TBSP lemon flavoring
• Blue gel food coloring
-Beat butter in a stand mixer, slowly add 1/2 C powdered sugar until combined they form small pebbles.
Continue to mix, slowly adding small amounts of heavy whipping cream until it starts to cream.
-Add 1 C powdered sugar, add small amount of heavy whipping cream…. continue to mix.
-Make sure the combination continues to cream.
-Repeat until all powdered sugar has been added.
-Taking a large spoonful, holding upside down, see if the prepared frosting holds onto the spoon. (Frosting doesn’t fall off the spoon.)
-If not add 1/2 C powdered sugar.
-If does…. divide frosting into 2 bowls.
-One bowl remains white while you add several drops of blue gel food coloring to the second bowl continuing to stir until the blue food coloring is well mixed.
-Spoon the white frosting into a pastry bag, add the blue frosting into the same pastry bag with frosting tip.
-Twist the open end of the pastry bag to force frosting to the tip.
-Frost cupcakes and add topping of your choice.
Now if you would like to add on the Chevron Wafer like I did it is so easy! This is how you do it: Draw circles on paper and then place it on a baking sheet. Then cover the baking sheet with wax paper and seal it with tape. Then fill a bag with icing and begin to fill the circle with the icing. Now you can use edible markers to draw the chevron lines on it.
